Can the original plastic float needle be replaced by the new metal needle?

If you mean the one with the viton tip, then yes and highly recommended.

They are supposedly fully interchangeable with the original plastic (nylon) type but do check that the fuel level is still correct with the viton tip needle.  I sometimes find that they give a higher fuel level (too rich) on a 376/389 which then has to be corrected by skimming a few thou off the base of the float valve housing  (If you dont know how to check that then remove the pilot jet nut and attach a close fitting clear polythene U tube to it so that you can see what the fuel level is)

Amal informed me that they recommend the aluminium one as it is lighter than the brass ones that have been fitted in the past and therefore reacts to the float bowl movements much easier preventing flooding.
Modern ethanol fuels are not as dense as pure petrol so have less influence on the float bowl.
I have seen pictures lately showing the aluminium needles with different lengths having the same part number too.
