I have noticed clutch back plates for sale and want to know the difference between plain and the ones with friction material on them, and also can you mix n match them.

Norton clutches can be  draggy and slippy  even if all the right bits, I would not mix and match . What year is the bike.

As Robert says, you need to know the year. The friction and plain plates have internal and external tangs respectively, but all changed when the AMC box appeared in late 50's. They alternate. Do you have problems? It's a lot of expense to change them if they are not the cause if your issues. Do you have a manual? Sounds like you need one. If it's a very recent acquisition, I'd suggest you don't rush into expense too quickly.  I have a few regrets after making unnecessary "improvements".

As mentioned above, one is “Norton”, one is AMC, the whole clutch is interchangeable but not the backplates without having the other plates to match.
