I have a couple of bikes both over 40 years, one being a Jubilee. To get free tax and no mot, do I have to change my log books to show they are historic, can I do this online. Will I have to insure the bikes before I do that.

I think you have to take the V5 to a Post Office to change taxation class to "historic"; I've not found a way to do that bit online. Yes, it has to be insured as you are applying to tax the vehicle. Print and take the MOT exemption form with you. Thereafter everything can be done online.

Sorry, but Post Office is required
But it is easy peasy.
Fill out changes section on V5C to alter tax class to 'Historic',
Download, print out and fill out form V112 from DVLA website - exempt from MOT form.
Make sure bikes are insured (PO will do online check)
Trot off to local post office with forms and walk out 5 minutes later with taxed bike(s).
Process was very easy for me last year when I changed 2 bikes to historic and also 'taxed' the Norton which was already in that class.

Yes, online you pay tax and no refund, have to get to a Post Office and get them to change class to historic. Then you pay no tax or pay tax for it to be refunded later depending how on the ball the Post Office on the day.

DVLA
Just post a completed V112 and your V5C directly to DVLA.
You will then receive a replacement V5C amended to historic vehicle class.
If you have a current insurance certificate you can then apply online for free road tax.
I found no need to visit the Post Office whatsoever.

Tax them online and you can make a declaration for the MOT provided they have not been heavily modified . The tax should come up as zero due to their age
